chipotle roasted vegetable layered salad
i may even like this better than the meat in these salads. and when you roll up the tortilla at the end with the leftovers still in the tortilla after the lettuce is gone, the flavors are just perfect.
cilantro lime rice
ala a friend of the skinny bovine
3 cups cooked white rice (1 1/2 cups uncooked)
1 cup loosely packed cilantro
1/2 cup chopped white onion
1/4 cup chopped green onion
1 1/2 tablespoons lime juice
3/4 teaspoon salt
1 teaspoon olive oil
pulse cilantro, onions, lime juice, salt and oil in blender, scrapping down the sides as needed, until well combined. fold mixture into warm rice.
chipotle roasted veggies
from perry's plate
1 red bell pepper, cut into matchsticks
1 poblano pepper, cut into matchsticks (i used green here once and it was great!)
1 medium zucchini, cut into matchsticks
1 medium onion, halved and sliced very thinly
1 cup fresh or frozen corn
3 T olive oil
1-2 tsp minced or pureed chipotles in adobo sauce (see note here)
1 tsp ground cumin
salt and pepper, to taste
place all sliced vegetables on a large rimmed baking sheet. in a small bowl whisk together the oil, chipotles, and cumin. pour over the vegetables and sprinkle a pinch or two of salt and pepper, to taste. using your hands, toss the vegetables in the oil mixture and ensure that everything is coated well. spread evenly in the pan and roast for 35-40 minutes, stirring every 10 minutes or so and shaking the pan to redistribute the vegetables evenly.
black beans
from perry's plate
1 15-ounce can of black beans, drained and rinsed
1/2 tsp ground cumin
pinch of salt
1/2 cup salsa or pico de gallo
to prepare the beans, place the drained and rinsed beans in a small saucepan with about 2-3 tablespoons of water. stir in cumin, salsa, and season to taste. let them simmer over medium heat until they're heated through.
i posted this dressing below a few years ago, but i've since refined it a bit by thinning it with salsa verde and milk. i've tried a few of the tomatillo-based cafe rio-style dressings and still like this one better!
cilantro lime ranch dressing
ala skinny bovine
1 1/3 cup fat free sour cream
3/4 cup low fat mayo
1 bunch cilantro
1 package ranch dressing mix
4 tablespoons salsa verde (green salsa)
1 clove garlic
1/8 teaspoon tabasco sauce (or more to taste if you want it spicier)
juice of 1 lime
blend all ingredients in blender until smooth. thin to your liking with milk and more salsa verde and blend again.
putting it all together...
toast a tortilla on your stove top in a pan. flip the tortilla and spread cheese to melt on the other side. when cheese is melted remove from heat.
on the tortilla, place a spoonful of rice, beans and roasted veggies. top with lettuce to your liking. add cilantro lime ranch dressing and any other toppings you desire - sour cream, guacamole, tortilla strips, etc.

let's roast some veggies: stacked roasted vegetable enchiladas
the only veggie i'd roasted previously is tomatoes (for this heavenly roasted tomato soup), which i'd recommend doing for almost any recipe. i always want my tomatoes roasted now. and yes, i know tomatoes aren't technically a veggie. :)
turns out roasted anything is amazing.
we'll start with these, even though they are pretty far off the beaten enchilada path. i found them on perry's plate and i love what she said about them - "I love ooey-gooey, cheesy enchiladas, but I thought this fresher, lighter version was great as well." i completely agree. these were a fun, healthy way to change it up.

crispy cheese and egg burritos
make sure to follow the directions closely - the cheese all crisped to the bottom of the egg rocks my world. enjoy!!

1 egg
salt and pepper
a handful of cheese (cheddar or cheddar jack)
tortilla
salsa
1. heat a frying pan over medium heat. spray with non-stick spray. crack egg into small frying pan. break yolk and spread around. lightly season with salt and pepper.
2. let the egg cook until 1/2 way done. spread a generous handful of cheese over the egg and let it cook another minute while the cheese oozes into the gooey side of the egg.
3. flip the egg so the cheese side is now down. finish cooking egg and make sure cheese gets brown and crispy.
4. when egg is almost done, put the tortilla on top of the egg in the pan and let it get warm.
5. wrap egg in warm tortilla, crispy cheese side down (otherwise the salsa will soak in and make the cheese not crispy), and top with salsa.
that's my dad's new salsa on the burrito. i'll share that recipe soon!

five ingredient fridays: bruschetta chicken pizza
i thought it would be fun to do a version of my own at home instead of over the campfire. she did hers with red wine vinegar, but since i have a love affair with balsamic i stuck with my old friend.
the results were amazing. and so easy to throw together for homemade pizza. every tomato you bite into feels like it bursts an explosion of balsamic in your mouth. definitely give this one a try!
prepare ahead though and really marinate the tomatoes for at least 8 hours. it really makes a difference.
1 pizza
2 small chicken breasts, seasoned generously with salt and pepper, cooked and sliced
bruschetta (my recipe below)
10 large fresh basil leaves, chopped
1 to 1 1/2 cups shredded part skim mozzarella cheese
1/2 cup shredded parmesan cheese
pizza crust of choice (i did a half recipe of my favorite with 3/4 white, 1/4 wheat flour)
1. roll out pizza dough to fit desired pan. bake as instructed (if you're using mine cook at 400 degrees) until bottom and top of crust are starting to brown, but not quite done. this is important as you don't want the marinated tomatoes to make the top soggy.
2. put bruschetta in a strainer for a few minutes and let most of the liquid run off.
3. on partially baked crust, add bruschetta. top with basil and chicken. add mozzarella and parmesan cheese.
4. return to oven. bake until toppings are hot, cheese it melted and crust is done baking and is golden. sprinkle with sea salt and pepper before serving or put it on the table for people to add themselves.
if you're vegetarian you can try this without the chicken.
bruschetta ala bovine - prepare ahead - marinate at least 8 hours!
8 on-the-vine tomatoes (good sized - but still smaller than a baseball. my price point for these is $0.69/lb - they are normally $1.88/lb at my wal-mart. ouch!), chopped
2 cloves garlic, minced
1/2 cup minced red onion
1 tablespoon olive oil
3 tablespoons balsamic vinegar
sea salt and fresh cracked black pepper
cut tomatoes. add garlic and onion. pour oil and vinegar over the top. season with salt and pepper. stir well. cover and refrigerate, letting the tomatoes marinate for at least 8 hours.

five ingredient fridays: pesto bowties with feta and tomatoes
wherever you are and whatever the temperature, pasta salad is such a great thing to eat (especially when it's hot). it's even better with only 5 ingredients!
this one is fun since it combines two of my favorite ingredients - pesto and feta cheese. i can't live without either of them - money and health aside. i love them. what ingredients can you not live without?
1 cup basil pesto (i used more like 3/4 cup) - try the classico brand - $2.08 at my wal-mart. not bad!
1 pint cherry or grape tomatoes, halved (got mine at the 99cents only store - more on this later)
4 oz feta cheese, crumbled (did you know they make low fat feta? not quite as good, but if your really trying to watch what you eat try it!)
salt and freshly ground pepper
cook the pasta according to package directions in a large pot of salted water. drain the pasta and run it under cold water just until it cools slightly. drain the pasta well.
transfer the pasta to a large serving bowl. stir in the pesto and gently mix until the pasta is coated. season with salt and pepper to taste (about 1/4 teaspoon each). add the halved tomatoes and feta cheese. toss to combine.
cover the pasta and refrigerate up to an hour before serving. if the pasta seems at all dry before serving, you can stir in additional olive oil to moisten the pasta (i didn't!).

five ingredient fridays: make-ahead lunch wraps
i've recently ventured into the land of crisped wraps. they are great for summer since they require minimal cooking. the thing i like best about these, though, is that i can freeze them and they make a perfect lunch to-go for my hubby for work.
here is a 5-ingredient variation first and then another that we liked. the possibilities are endless with these. combine some of your favorite ingredients and i'm sure they'll be a winner at your house too!
4 cans black beans, drained and rinsed
2 cans pinto beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes with green chilis
cooked brown rice (amount suggested - 2 cups rice cooked in 5 cups water for 45 minutes)
cheese and tortillas
1. combine beans, corn tomatoes, rice and desired amount of cheese. may season with chili powder, cumin or garlic if desired. roll up in tortillas and crisp on both sides in pan on stove to seal ingredients inside.
2. let cool. wrap in plastic wrap and then tin foil. store in freezer. reheat in microwave. serve with salsa, sour cream.... or ketchup if you're ridiculous like my husband.
here's another recipe we love at our house. these freeze pretty well, too, but they are extra yummy fresh!! i made them for while i was gone this last week and my husband was in heaven every day for lunch!

face off: sloppy joes vs. sloppy sams
- sloppy joes - traditional recipe, canned sauce, made with ground beef. i usually like them okay, but since i had the below alternative i couldn't even stomach the joes in comparison.
- sloppy sams - lentils, homemade sauce, sweetened with molasses and brown sugar. simply amazing. i can eat this stuff with a spoon, no bun required.
3 cups chicken broth
1 cup lentils, rinsed
1 cup chopped onion
a dash of olive oil
1 15 oz can petite diced tomatoes
2 cloves garlic, minced
1/2 (6 oz) can tomato paste
1/2 cup ketchup
1 teaspoon ground mustard
1 tablespoon chili powder
1 1/2 tablespoons molasses (use all brown sugar if you don't have it)
1 1/2 tablespoons brown sugar
1 dash worchestershire sauce
salt and pepper to taste
4 hamburger buns
- combine broth and lentils in a saucepan. bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 30 minutes, stirring occasionally.
- meanwhile, cook onions with the olive oil in a large skillet over medium heat until the onions have softened and turned translucent, about 4 minutes. add tomatoes and garlic, and cook for 5 minutes. stir in tomato paste, ketchup, mustard powder, chili powder, molasses and Worcestershire sauce; simmer 5 to10 minutes until thickened.
- drain lentils and reserve cooking liquid (i never have any liquid to drain). stir lentils into sauce mixture, adding cooking liquid or water as needed to obtain the desired "sloppy joe" consistency. serve on buns.

a burger for the health minded
1 dash olive oil, plus additional for brushing
1 cup finely chopped onion
8 ounces baby portobello mushrooms, finely chopped (i used cheaper mushies, but portobellos would be amazing if you can afford it!)
1/2 teaspoon cumin
1/2 teaspoon smoked paprika (or regular)
4 slices whole wheat sandwich bread, lightly toasted
15 ounce can black beans, rinsed and drained
1/4 cup packed fresh cilantro leaves
2 ounces (about 1/2 cup) crumbled goat cheese (again, i used a cheaper cheese, but this would be yummy. i'm thinking feta would be awesome.)
salt and fresh ground black pepper
4 ciabatta buns, split and toasted
your choice of toppings
preheat grill. (Or grill in pan if its your only option...)
in a large skillet, heat a dash of oil over medium-high. add onion - cook until golden, about 3 to 4 minutes. stir in mushrooms, garlic, cumin and paprika - cook until the mushrooms have released their juices, about 4 to 6 minutes. remove from the heat and set aside to cool slightly.
tear toasted bread into pieces and place into a food processor (or blender) - process until broken down into crumbs. pour into a medium bowl. add mushroom mixture, beans and cilantro into the food processor bowl - pulse until combined, but not smooth - leave some chunky bits. scoop mixture into the bowl with the bread crumbs - add goat cheese and season with salt and fresh ground black pepper. mix ingredients together, then divide into four equal portions. with dampened hands, shape each portion into 4 thick patties. lightly brush each side of all patties with oil.
place patties onto the grill and cook until thoroughly heated through and the outside has crisped, about 5 minutes per side (mine takes longer - more like 7 or 8 min). serve burgers on toasted buns and with desired toppings.

flashback to lentils: curried coconut lentil bisque
i recently fell in love with lentils all over again when i made this fabulous meal last week.
i like ANYTHING made with coconut milk... coconut meets lentil and curry? has to be even better. this is one of those ultra-complete meals - it was dirt cheap, pretty, it felt good on its way down, it is super healthy and balanced and it tasted fabulous. and don't let the peas scare you - the sweetness of the peas is the perfect balance to the curry.
a dash of olive oil
1/2 an onion, chopped
1 clove garlic, chopped
2 cups carrots, chopped
2 teaspoons curry powder (another teaspoon if you want it hotter)
1 1/2 cups dry lentils, rinsed
6 cups chicken broth
1 can light coconut milk (always 99c at trader joe's!)
1 pinch cinnamon
1 pinch cumin
1 pinch ginger
salt and pepper to taste
1 cup white rice, cooked in 2 cups water for 2 minutes
1 12 oz bag green peas, cooked according to directions
1. heat oil in large pot. add onions and carrots. cook 5-6 minutes. add garlic and curry. cook 1-2 more minutes or until curry is fragrant.
2. add chicken broth, lentils and coconut milk. bring to a boil. reduce heat and simmer 35-40 minutes or until lentils are soft.
3. add other spices. use immersion blender to blend soup into a bisque (a thick soup). salt and pepper to taste.
4. put rice and peas in a bowl. pour bisque over the top. enjoy!

perfect deviled eggs - perfect for your super bowl party
recipe for 36 deviled eggs (18 whole eggs)
2 tablespoons apple cider vinegar (and more to taste)
1/2 teaspoon ground mustard (and more to taste)
light mayonnaise to taste
salt to taste
paprika, sprinkled on top for decoration if desired
1. after removing shells, cut eggs in half lengthwise. put all yolks in mixing bowl and set whites aside. see below.
3. sprinkle top with paprika, if desired. chill in fridge - serve cold!

rainy day vegetable soup
the folks at babble reminded me today that it's national soup month which fit perfectly with this soup i made last night for dinner. it's been so rainy all week here and i think i'm in good company with the rest of your westerners who are experiencing similar conditions. make this simple soup with a great loaf of homemade bread (i'll post the one i made soon) and you'll feel warm, toasty and satisfied in no time - for a ridiculously low-cal and low-budget dinner.
babble posted an article on soups for kids. here was my commenter's input on getting kids to like soup:
"a trick i used to get my 2 year old to like soup was to strain out the soupy part. then all that's left is the beans, noodles, mushy veggies, etc - all kid friendly and coated in a delicious broth that sooner or later they'll want to try too. i think soup can be intimidating for kids because it's hard to eat - so make it easy!"
and forgive me for no pictures - they turned out terrible for some reason!
6 large servings
a dash of olive oil
1/3 of a medium onion, chopped
2 cloves garlic, minced
2 medium carrots, peeled and chopped
8 cups chicken broth
1 15 oz can petite diced tomatoes
1 15 oz can french style sliced green beans
1 large or 2 small russet potatoes, peeled and diced
1 zucchini, chopped
1 teaspoon dried parsley
1/2 teaspoon dried basil
1 large pinch rosemary
1 large pinch thyme
a dash of black pepper
salt to taste
1. heat olive oil in large pot. add onions, garlic and carrots. cook until onions are soft - about 5 minutes.
2. add remaining ingredients, except zucchini. bring to a boil. reduce heat and cover, simmer 20 minutes or until potatoes are soft. add zucchini 5 minutes before serving.

delicious pitas ala mom and a baby
my mom was here all week spoiling us and playing with my daughter while we were at the hospital. she was amazing. she spoiled me with feta cheese the other night with the most delicious pitas. they were fabulous, so here's the [approximate] recipe. they are a little on the pricey side, so have a splurge night! i should have taken a picture, but i ate them too fast.
whole wheat pita breads
sun dried tomato pesto (the classico brand at my wal-mart is $1.96)
fresh spinach
portabello mushrooms, sliced
roma tomatoes, sliced
sliced black olives
feta cheese
parmesan cheese
spread the pesto on the pitas. cover with spinach and then the other veggies. top with the cheeses. heat in the oven at 350 until veggies cook flat, cheese melts and pita is slightly crispy.
i definitely loved my return to eating feta after being pregnant. thanks for the treat mom!!

recipe of the week: fusilli alla caprese
4 servings
1 pound fusilli pasta (i used a little less than a pound of rotini)
2 tablespoons olive oil
2 cloves garlic, minced
3 cups chopped roma tomatoes
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup packed fresh basil leaves (grow your own!), chopped (or about 5 tablespoons dried basil - this seems like a lot, so maybe add it a little bit at a time)
fresh parmesan cheese, for topping
cook pasta as directed.
in a medium skillet heat the olive oil over medium heat. add the garlic and saute until fragrant, about a minute. add the tomatoes, salt, and pepper. as the tomatoes cook and soften, smash them. continue to cook until the tomatoes make a chunky style sauce, about 4 minutes. transfer the tomato sauce to the bowl with the pasta. toss to combine. add the basil leaves (if you're using dry, i'd add them to the tomatoes in the skillet) and stir to combine. serve topped with a sprinkle of parmesan cheese.

recipe of the week: cuban black beans and rice with balsamic avocado dressing
black beans:
1/3 medium onion
1 green bell pepper
2 cloves garlic, minced or crushed
dash of crushed red pepper (optional - my husband said it needed a tiny kick)
3 cans black beans, one drained
2 teaspoons cumin
1/4 teaspoon garlic salt
1/2 teaspoon salt
a few dashes of black pepper
run onion, bell pepper and garlic through a small food chopper. heat a splash of olive oil in a medium/large pot. add onion, bell pepper, garlic and crushed red pepper (optional) and let cook over medium heat for about 5 minutes until it has had time to soften. add black beans, cumin, garlic salt, salt and pepper. stir. let simmer on medium low until beans are heated through - 15-30 minutes.
yellow rice (adapted from emeril lagasse's from here - or make your own or buy some!):
3/4 teaspoon ground turmeric
1/4 teaspoon ground cumin
pinch cinnamon
3 cups water
1 1/2 teaspoons chicken bullion
1 tablespoon butter
1/2 teaspoon salt
1 1/2 cups long grain rice
in a medium saucepan, heat the turmeric, cumin, and cinnamon over low heat until fragrant, stirring, about 30 seconds. add the water, salt, and butter and bring to a boil. add the rice and stir well. cover and reduce heat to a bare simmer. cook, covered, without stirring until the water is absorbed and the rice is tender, about 20 minutes.
remove from the heat and let sit, covered, without stirring, for 10 minutes. fluff with a fork.
balsamic avocado dressing:
approximately equal amounts of chopped tomatoes, chopped red onion and sliced avocado. (not the best the next day, but if you're going to eat it all without leftovers i'd use about 4 medium/large tomatoes, 2/3 of a red onion and 2 avocados - cut that in half if you're going for leftovers the next day and make a fresh batch of dressing to go with.) cover in a drizzle of olive oil and drench in balsamic vinegar. stir well and let marinate for a few minutes before serving.
put beans on rice and top with dressing. add additional balsamic vinegar to taste if you'd like.

1 (12 ounce) package penne pasta (sometimes i use the whole 16 oz and just add a bit more sauce)
1 yellow squash, chopped
1 zucchini, chopped
1/2 red bell pepper, julienned (pricey! use green pepper or leave out! - or splurge)
1-2 tomatoes, chopped
1 cup fresh green beans, trimmed and cut into 1 inch pieces
5 spears asparagus, trimmed and cut into 1 inch pieces
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 tablespoon lemon juice
1 tablespoon Italian seasoning
1 tablespoon butter
1/4 large yellow onion, thinly sliced
2 cloves garlic, chopped
2 teaspoons lemon zest (i like it better with a little less, but use your judgement!)
1-1 1/2 tablespoons dried basil (originally called for 1/3 cup fresh, but dried is cheap!)
1-1 1/2 tablespoons dried parsley (same as above - use fresh if you want to splurge!)
3 tablespoons balsamic vinegar
1/2 cup grated parmesan cheese
directions
1. preheat oven to 450 degrees F (230 degrees C). line a baking sheet with aluminum foil.
2. bring a large pot of lightly salted water to a boil. add penne pasta and cook for 10 to 12 minutes or until al dente; drain.
3. in a bowl, toss squash, zucchini, red bell pepper, tomatoes, green beans, and asparagus with 2 tablespoons olive oil, salt, pepper, lemon juice, and Italian seasoning. arrange vegetables on the baking sheet, and roast 15 minutes in the preheated oven, until tender.
4. heat butter in a large skillet. stir in the onion and garlic, and cook until tender. mix in cooked pasta, lemon zest, basil, parsley, and balsamic vinegar. gently toss and cook until heated through. remove from heat and transfer to a large bowl. toss with roasted vegetables and sprinkle with cheese to serve.

recipe of the week: not-so-fried rice
makes a huge wok full (about 6 servings)
2 tablespoons olive oil
1/3 of a medium onion, chopped
1 1/2-2 cups (or more if you aren't using meat) veggies of choice (i used carrots and broccoli)
1 1/2 cups cooked cubed turkey or chicken - optional (i used some leftover from a huge turkey breast i roasted a while ago and froze)
5 eggs, scrambled
3-4 tablespoons soy sauce
green onion tops, chopped
1. heat oil in wok on high. add onions and sautee 2 minutes or until soft. add veggies and sautee until whole mixture is damp from oil. cover and let steam until veggies are crisp-tender (open wok and stir once in a while). about half way through steaming, add meat (optional) and let sautee with the rest of the mixture.
2. add cooked rice to wok and pour soy sauce over the top. mix well. scramble eggs and add to wok. add green onions. mix well again. cover wok and let heat for a few minutes until hot throughout.
3. top with extra soy sauce if desired and very optional... tabasco - i love tabasco on my fried rice. strange i know! hope you like it!

splurge night: part 1
answer: "splurge, definitely splurge."
since i'm a healthy and budgeted cooker, there are 2 types of splurges at my house. here are my healthy splurge guidelines (stay tuned for my budget splurge guidelines soon!):
- set boundaries - this means sticking to my list of things to never use for the most part. there are plenty of other things i love to use in cooking that aren't particularly good for you though. ex: coconut milk (curry. mmm.), creamy soups (made with milk of course, and maybe a tablespoon or two of butter). see one of my favs below. we love, love, love this soup at our house.
- know yourself, know your goals - if you're trying to be disciplined and maintain your weight, go ahead - splurge once a week! if you're trying to loose a little, make it once every other week. if you want to loose a lot, make it once a month. we all deserve a reward for our discipline.
- only make enough for that meal - it's splurge night. not splurge night + leftovers for the next 2 days. have your splurge and then get back to your best habits in a hurry. :)

1/2 cup sliced carrots (i use 1 cup carrots and no celery - just a preference)
1/2 cup sliced celery
1/4 cup chopped onion
1/4 cup butter
1/4 cup flour (i use whole wheat)
1 teaspoon salt
1/2 teaspoon pepper
2 cups milk
1 (14.75 ounce) can cream-style corn
1 cup shredded parmesan cheese
- in a large saucepan, combine the first five ingredients; bring to a boil. reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender (do not drain).
- meanwhile, in a small saucepan, melt butter. stir in flour, salt and pepper until smooth; gradually stir in milk. bring to a boil; cook and stir for 2 minutes or until thickened. stir into the vegetable mixture. add corn and parmesan cheese. cook 10 minutes longer or until heated through.

recipes of the week: kristi's famous burritos
1 package instant spanish rice, cooked (any kind will work - you should be able to get it for about $0.60. homemade spanish rice would be delicious too - you choose!)
1 green bell pepper, chopped
1/2 an onion, chopped
1 jalapeno (my addition), chopped
dash of olive oil
1 can black beans, rinse and drained
cumin, garlic salt and pepper, to taste
8 flour tortillas
green enchilada sauce
shredded cheese
1. cook spanish rice according to directions. while spanish rice is cooking, add a dash of olive oil to large skillet and heat oil. add green pepper, onion and jalapeno to skillet and cook until tender, abuot 5 minutes.
2. add black beans to skillet and season the mixture to taste with cumin, garlic salt and pepper. add spanish rice when done. mix well.
3. fill flour tortillas with a generous helping of filling and place in a 13x9" glass baking dish. spoon enchilada sauce over the top then top with desired amount of cheese. bake at 350 for 30 minutes.
top with any topping that sounds good to you. we ate ours with a little bit of sour cream and hot sauce for a little extra kick. enjoy!

confession and a quick weeknight meal
the reason it is a confession is because it is an explanation for my highly marginal food blogging the last 3 months. it has been hard to figure out things i want to eat, much less mustering up the desire to cook them. i'm feeling better now, so hopefully my blogging will get a little bit better.
when i made the pasta e fagioli last week i bought a $1 loaf of french bread to go with it. it was super yummy with the soup, but i always hate wasting half a loaf since fresh french bread gets stale so fast! and then i remembered something my mom used to do - so here's a quick weeknight fix great for leftover, day-old french bread.
1. cut a loaf of french bread in half (as shown in pics above). top with favorite pizza toppings.
2. bake in oven at 400 degrees just until cheese is melted (since if you cook it longer it makes your french bread harder). yum!!
serve with a yummy side salad for a healthier meal!
healthy cooking on a budget
qualifications: what qualifies me to blog on cooking healthy on a small budget? well, as my husband is still a student, my budget is not what you'd call large. and as for the healthy part, when i was 10 i was diagnosed with pancreatitus - a disease that doesn't effect me much anymore unless i eat food that is too greasy or has too much fat (in which case, well, let's just say i get really sick). this had steered my experience and limited cooking expertise in a health-conscious direction.
