recipe of the week: homemade poppyseed dressing

my absolute favorite lunch is a yummy salad. if you do it right you can do it cheap and healthy (stay tuned - next post will have more on this). one of the best ways to make it cheap and healthy is to make your own salad dressings. good store-bought salad dressings (like newman's) are expensive and REALLY high on the bad fat and calories scale. change the salad dressing-stigma in your brain and make your own - the healthy way!

here is one of my favorite homemade dressings. it is really yummy on a salad with chicken and your favorite fruit. mmm..... enjoy!

poppyseed dressing









1/2 cup low-fat or fat-free mayo
1/4 cup skim milk
1/4 cup white sugar
1/8 cup distilled white vinegar
1 tablespoon poppyseeds

mix well. refrigerate until ready to use and refrigerate leftovers.

coming next is one of my favorite meals - a lunch salad with a cafe rio-style flair!

I noticed your turkey sale on the side bar - Clint and I always used to buy the ground turkey in the frozen section at Macey's (Jenny-O I think?) and it was cheapest there, I believe. You'll have to check it out.

Mmmmmmm, yummy! You should think about adding tags to your recipes. Then you could post an index in your sidebar. If I want salad dressing recipes, I click it, and bammo, they all show up.

I should make this dressing for Jeff!! He loves this stuff but we never bought it more than one time when I think I felt like splurging. :)

I saw Clare's comment and just wanted to add to it...Jennie-O was typically $1.00 for a 1lb tube when on sale and not on sale it was $1.39 I believe. I found some here the other day for $1 and was reminded of the orange and brown packages we used to buy in Provo. Ground turkey is GREAT.

healthy cooking on a budget

disclaimer: i don't claim to be an expert on cooking, weight loss or even healthy eating, but i do love to cook, find healthy, taste bud-friendly tricks and most of all, i love to eat!

qualifications: what qualifies me to blog on cooking healthy on a small budget? well, as my husband is still a student, my budget is not what you'd call large. and as for the healthy part, when i was 10 i was diagnosed with pancreatitus - a disease that doesn't effect me much anymore unless i eat food that is too greasy or has too much fat (in which case, well, let's just say i get really sick). this had steered my experience and limited cooking expertise in a health-conscious direction.
