bbq pulled pork and magic coleslaw sandwiches

okay.... here it is! the magic cole slaw. this stuff has changed my life.

let me start from the beginning. back in may when we moved a friend from my church offered to bring us dinner one night while we were getting settled in. she showed up with bbq pulled pork (yum), trader joe's ciabatta buns (yum), sun chips (yum), fruit salad (yum) and cole slaw (yikes!)... to put on the sandwiches (double yikes!).

since it would be rude not to try it, i decided i'd better.and wow! am i glad i did!

so i asked her what she put on the magical cole slaw (that's a direct quote). "girard's apple poppyseed dressing," she said.
problem: my budget doesn't do salad dressings that cost $4.99 (on my budget i have $7 total per day to feed my family. $5 for salad dressing doesn't work.)

solution: replicate the dressing. done! it's close enough to give the same effect on the sandwiches and hubby likes it better than girard's. so ha!

this really is a great, tasty, well-balanced meal when you add the coleslaw. cabbage is amazing for you.

bbq pulled pork and magic coleslaw sandwiches
enough coleslaw for 6 sandwiches

pulled pork:
a lean pork roast (size of your choosing)
your favorite bbq sauce (we love sweet baby rays - you can find it at walmart)

trim pork roast of excess fat and place in crock pot. smother with tons of bbq sauce (if you're not sure about how much to add, just make sure to check it a couple of times throughout the day and add more if it's looking dry). cook 8-10 hours on low. shred at the end and add more bbq sauce if it needs more.

magic coleslaw:
1 bag of prepared coleslaw
1 1/2 to 1 3/4 cup apple poppyseed dressing (recipe below)

mix coleslaw and dressing together in a bowl.

the bovine's apple poppyseed dressing:
1/2 cup cider vinegar
1/4 cup + 2 tablespoons frozen apple juice concentrate
3/4 cup + 2 tablespoons light tasting olive oil
1/3 cup water
1/2 cup sugar
1 teaspoon molasses (optional)
1 to 1 1/2 teaspoons dried onion flakes
4 to 6 dashes salt, or to taste
1 tablespoon poppyseeds

combine all ingredients but poppyseeds in a blender. mix well until blended. add poppyseeds. mix well. refrigerate 4+ hours to let onions rehydrate and flavors meld.

put the sandwich together:

toast ciabatta buns (we like walmart's). top with pulled pork and more coleslaw than you think you'll want. serve with lots of napkins. :)

freeze leftover bbq pulled pork for [the following week] when you crave the sandwiches again. thaw in fridge over night. heat and serve.

------------------

you'll have extra dressing. what should you do with it? an apple poppy seed spinach salad up next to use it up! stay tuned!

five ingredient fridays: make-ahead lunch wraps

happy friday! and happy blogging. summer is too much fun to find time to blog much. i'm sorry for abandoning you so much!

i've recently ventured into the land of crisped wraps. they are great for summer since they require minimal cooking. the thing i like best about these, though, is that i can freeze them and they make a perfect lunch to-go for my hubby for work.

here is a 5-ingredient variation first and then another that we liked. the possibilities are endless with these. combine some of your favorite ingredients and i'm sure they'll be a winner at your house too!
make-ahead lunch wraps
from allrecipes.com

4 cans black beans, drained and rinsed
2 cans pinto beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes with green chilis
cooked brown rice (amount suggested - 2 cups rice cooked in 5 cups water for 45 minutes)

cheese and tortillas

1. combine beans, corn tomatoes, rice and desired amount of cheese. may season with chili powder, cumin or garlic if desired. roll up in tortillas and crisp on both sides in pan on stove to seal ingredients inside.
2. let cool. wrap in plastic wrap and then tin foil. store in freezer. reheat in microwave. serve with salsa, sour cream.... or ketchup if you're ridiculous like my husband.
here's another recipe we love at our house. these freeze pretty well, too, but they are extra yummy fresh!! i made them for while i was gone this last week and my husband was in heaven every day for lunch!

five ingredient fridays: homemade dry onion soup mix and french dips

this might be cheating because onion soup mix isn't a meal, per se, but french dips are... so i'm reposting. and since they both have 5 ingredients i think it counts! we had them again the other night and they were amazing, as usual.

and making your own onion soup mix definitely will save you some bucks. that stuff is expensive!!!

the best french dip sandwiches
(originally posted here)

sandwich is falling apart with deliciousness.

1 recipe onion soup mix (see below)
1 package zesty italian dressing mix (or homemade mix here)
a roast (i usually use rump or whatever i got on sale for $1.89/lb or less)

put roast in crock pot. fill with water so the top of the roast is poking out of the water. pour in mixes. slow cook on low for 8-10 hours. it is done when it falls apart. (depends on your crock pot and the size of your roast.)

serve on yummy french rolls (don't go stingey here - get good ones!), broiled in the oven to toast with pepper jack cheese on them (broil with the cheese on them). carmelized onions are also delicious on them. dip in the juice from the crock pot.

dry onion soup mix
from recipezaar.com (here)
  • 4 teaspoons beef bullion granules
  • 8 teaspoons dried onion flakes
  • 1 teaspoon onion powder
  • 1/4 teaspoon seasoned pepper

five ingredient fridays: chipotle chicken salad sandwich

wow. friday again already? i haven't posted in a week. i have a good excuse - promise! we bought a house! a repo. they took the carpet, the doors, everything. and we're trying to get in fast so we don't have to pay rent and a mortgage for more than we have to.

so i've been busy spending hours and hours at home depot. and picking out my granite counter tops. i think i'll sleep on them instead of in our bed. i'm so excited. i'm sure they will make my food taste better. okay, maybe not, but they will decrease my prep time since i don't have to wash a million cutting boards and find hot pads to put on my counter when things come out of the oven.

if you've been busy too, throw this together and impress whoever you're cooking for. it was amazing!

chipotle chicken salad sandwich
3+ servings

2 cups copped cooked chicken (not canned, never canned)
a little less than 1/4 cup light mayo with olive oil (kraft)
1/2 a chipotle pepper*** (canned in adobo sauce), minced

combine above, mix well.

serve on favorite bread (we used homemade foccacia - drool), with avocado, tomato and lettuce.

done! hope this makes your weekend easier!

***note about chipotle peppers: they come in a tiny can with a million peppers in it, but they stay good in a tupperware in your fridge for forever so just open a can and decide to commit yourself to something chipotle once a week for a month or more. or just eat this chicken salad sandwich every other day. i've considered it.

face off: sloppy joes vs. sloppy sams

picture from allrecipes.com

we spent Christmas with my in-laws in UT this year. when all of the family (my hubby is one of 7, so this means lots of people) got together right before Christmas, my husband requested a main course on the 23rd of sloppy joes as an easy and delicious way to feed so many hungry mouths. my hubby's little sister and her husband are vegetarians, so i thought i'd make a complimentary vegetarian version that i'd made before to please both halves of the crowd. i liked having them both there as kind of a "face off". here was, in my opinion, the results of said face off:
  • sloppy joes - traditional recipe, canned sauce, made with ground beef. i usually like them okay, but since i had the below alternative i couldn't even stomach the joes in comparison.
  • sloppy sams - lentils, homemade sauce, sweetened with molasses and brown sugar. simply amazing. i can eat this stuff with a spoon, no bun required.
winner? clearly, the sloppy sams take home the award. cheaper, appease my lentil obsession and way healthier than the traditional joes. put them to the test in your house and let me know if they pass!

sloppy sams
4 big servings
modified from allrecipes.com, specifically here

3 cups chicken broth
1 cup lentils, rinsed
1 cup chopped onion
a dash of olive oil
1 15 oz can petite diced tomatoes
2 cloves garlic, minced
1/2 (6 oz) can tomato paste
1/2 cup ketchup
1 teaspoon ground mustard
1 tablespoon chili powder
1 1/2 tablespoons molasses (use all brown sugar if you don't have it)
1 1/2 tablespoons brown sugar
1 dash worchestershire sauce
salt and pepper to taste
4 hamburger buns

  1. combine broth and lentils in a saucepan. bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 30 minutes, stirring occasionally.
  2. meanwhile, cook onions with the olive oil in a large skillet over medium heat until the onions have softened and turned translucent, about 4 minutes. add tomatoes and garlic, and cook for 5 minutes. stir in tomato paste, ketchup, mustard powder, chili powder, molasses and Worcestershire sauce; simmer 5 to10 minutes until thickened.
  3. drain lentils and reserve cooking liquid (i never have any liquid to drain). stir lentils into sauce mixture, adding cooking liquid or water as needed to obtain the desired "sloppy joe" consistency. serve on buns.

a burger for the health minded

skinny-bovine confession (i'm discovering i have lots of these): there is nothing, i mean nothing, i love more than a good cheeseburger and french fries. or even a bad one really. i love the $1 double stack at wendy's and that is clearly not a fabulous burger.

these black bean burgers i found on sharon's blog (which she found on culinary in the country/desert) are almost better than a real beef burger. they are seriously that good. see the look on my face. sheer heaven, people. we devoured them on our new favorite find - ciabatta buns from wal-mart (6 for $2.50). i would eat anything that comes on these buns. a little expensive for everyday dinners but perfect for date night (which usually entails burgers, especially these pico and guac burgers) around our house. enjoy them!!

black bean mushroom burgers
4 big burgers

1 dash olive oil, plus additional for brushing
1 cup finely chopped onion
8 ounces baby portobello mushrooms, finely chopped (i used cheaper mushies, but portobellos would be amazing if you can afford it!)
1/2 teaspoon cumin
1/2 teaspoon smoked paprika (or regular)
4 slices whole wheat sandwich bread, lightly toasted
15 ounce can black beans, rinsed and drained
1/4 cup packed fresh cilantro leaves
2 ounces (about 1/2 cup) crumbled goat cheese (again, i used a cheaper cheese, but this would be yummy. i'm thinking feta would be awesome.)
salt and fresh ground black pepper
4 ciabatta buns, split and toasted
your choice of toppings

preheat grill. (Or grill in pan if its your only option...)

in a large skillet, heat a dash of oil over medium-high. add onion - cook until golden, about 3 to 4 minutes. stir in mushrooms, garlic, cumin and paprika - cook until the mushrooms have released their juices, about 4 to 6 minutes. remove from the heat and set aside to cool slightly.

tear toasted bread into pieces and place into a food processor (or blender) - process until broken down into crumbs. pour into a medium bowl. add mushroom mixture, beans and cilantro into the food processor bowl - pulse until combined, but not smooth - leave some chunky bits. scoop mixture into the bowl with the bread crumbs - add goat cheese and season with salt and fresh ground black pepper. mix ingredients together, then divide into four equal portions. with dampened hands, shape each portion into 4 thick patties. lightly brush each side of all patties with oil.

place patties onto the grill and cook until thoroughly heated through and the outside has crisped, about 5 minutes per side (mine takes longer - more like 7 or 8 min). serve burgers on toasted buns and with desired toppings.

and just because i love this cute little spaghetti face....

recipe of the week: jalapeno pico burgers with homemade guacamole

this is hands down my husband and i's favorite way to eat a cheeseburger. we try and replicate it at restaurants, but it is always better at home. if you love spicy food you'll love this burger. it's fabulous. pair it with oven fries and some corn on the cob for a perfect dinner.

and notice the recipe for homemade guacamole - it contains the secret to perfect guac. getting a big clump of onions always ruins guacamole for me and onion salt isn't the same, but my friend maggi taught me the secret to fix that in college. you need the onion and its juice for perfect guac. see how below.

jalapeno pico burgers with homemade guacamole

hamburgers, grilled at home
buns
cheese of choice (really good with cheddar or pepper jack)
jalapenos (from the bottle)
homemade guacamole (below)
fresh pico de gallo
extra cilantro
tomato, lettuce or other desired burger toppings

put burgers together as desired with above ingredients. (if you spread the guac nice and thick on the bun and then put the jalapenos, pico and cilantro right on top of it it usually stays together pretty well!)

homemade guacamole

avocados
roma tomatoes (optional)
an onion (yellow or white)
garlic salt
lemon juice
salt and pepper to taste if desired

peel, pit and mash avocados in bowl or tupperware (keep a pit to leave in with leftover guac - it keeps it from getting brown as easily). chop a roma tomato or two (or however many you like), leaving middles out, and add to avocado. slice onion in half and then use a spoon to scrape the onion into the bowl, allowing juice and flesh to fall from the onion. alternate adding scraped onion, garlic salt, lemon juice and salt and pepper to taste until your guacamole is exactly how you like it! some people like more/less onion so there is no exact science here. just bust out some chips and try it as you go. mmm....

splurge night: part 2

on to the 2nd type of splurging - budgeted splurging (click here if you missed the first type). eating wouldn't be fun if you couldn't use some pricier, more fun ingredients once in a while. here are my guidelines for making your splurge night still budget-friendly:
  • plan ahead - if you're going to have a budget splurging meal, plan ahead for it and each extra cheaply the rest of the week to compensate. also, if you plan ahead you can get things for your splurge while they are on sale. (ex. we love the french dips recipe below, but i don't buy the roast unless i can get it for $1.79/lb or less and i try and find the pepper jack on sale as well)
  • stay in your budget - splurging shouldn't have to mean buying the most expensive ingredients out there, just something you don't normally buy. and put it in the budget. if your food budget is a little tight that month, find another category to squeeze it into. i'm infamous for filing yummy, splurge ingredients into my date budget or my miscellaneous category.
  • have a date/fun budget - sometimes the splurge we want is a saturday night with no cooking - we'd rather someone else cook and clean up. so we have a date budget and that way we can have eating out be a budget-friendly splurge.
this is probably our favorite budgetary splurge. we love, love, love these sandwiches. i never liked traditional french dips, but these are fabulous.

french dips
ala my bff maggi

my french dip decided to fall apart for the picture... but man, was it good!!!!!!

1 package onion soup mix
1 package zesty italian dressing mix (or homemade mix here)
a roast

put roast in crock pot. fill with water. pour in mixes. heat on high. it is done when it falls apart. (depends on your crock pot and the size of your roast.)

serve on yummy french rolls (don't go stingey here - get good ones!), broiled in the oven to toast with pepper jack cheese on them (broil with the cheese on them). carmelized onions are also delicious on them. dip in the juice from the crock pot.

help sales help you

does anyone feel like a boring cook once in a while? i definitely do. i find myself cooking the same kinds of things all the time with very little variation.

that's where sales come in. when fun things come up on sale i try and seize the moment and get creative while fun things are cheap! stop throwing away your sale ads and add some variation to your meals.

here's my most recent "varied" creation. this isn't terribly uncommon in the normal world, but it is in my house! the stars aligned and the right ingredients came on sale and viola! the combination of flavors was soooo wow!!

chicken avocado pitas

large, thin whole wheat pitas (i got a bag of 6 for $1! - that was my fun sale item!)
shredded/chunked chicken (sliced turkey would be good too!)
sliced avocado, lightly salted
sprouts
1/3 less fat cream cheese
any other veggies you want (my husband wanted tomatoes too!)

1. slice pita in half and open carefully.
2. spread a thin layer of cream cheese inside. layer sprouts on top of cream cheese so they don't fall out, then stuff with avocado and chicken.
3. mmm... enjoy!

healthy cooking on a budget

disclaimer: i don't claim to be an expert on cooking, weight loss or even healthy eating, but i do love to cook, find healthy, taste bud-friendly tricks and most of all, i love to eat!

qualifications: what qualifies me to blog on cooking healthy on a small budget? well, as my husband is still a student, my budget is not what you'd call large. and as for the healthy part, when i was 10 i was diagnosed with pancreatitus - a disease that doesn't effect me much anymore unless i eat food that is too greasy or has too much fat (in which case, well, let's just say i get really sick). this had steered my experience and limited cooking expertise in a health-conscious direction.
