banana snack cake

this banana snack cake was just like banana bread, but you didn't have to wait an hour for it to cook! no white flour and it was completely delicious. both times i've made it it failed to last 24 hours. try it for yourself!

banana snack cake

1 cups whole wheat flour
1 cup oat flour (toss some oats in your blender!)
1 teaspoon baking powder
1 teaspoonbaking soda
1/2 tsp salt
1 cup sugar
2 eggs
1/4 cup unsweetened applesauce
1 cup mashed, ripened banana (i use 4 smallish bananas)
1/4 cup vanilla soy milk (original recipe called for 1/2 cup sour cream - this would be great too!)
1 tsp vanilla
1/2 cup chocolate chips


preheat oven to 350 degrees. spray a 9x 13 pan with non-stick cooking spray.

in a large bowl mix together sugar, eggs, and applesauce. add bananas, soy milk (or sour cream) and vanilla. beat again until smooth.

add the dry ingredients slowly. the batter will be thick. fold in chips.

pour batter into pan and bake for 25 to 28 mins or until toothpick comes out clean.

cool completely on a wire rack. cut into 16 pieces.

  1. Yum! I'm always making banana bread because I'm so picky about the ripeness of bananas that I like. I'm excited to try this!

  2. I HEART THIS RECIPE! I used non-fat yogurt that I had (needed to use up) in place of the sour cream. I used muffin pan rather than 9x13 (half the recipe for 1 dozen muffins - 350 for 20-ish min.). Matt is not a cinnamon raisin fan, but I am. I added choc. chips to half of the mixture and raisins with 1-2 dashes of cinnamon to the other half. I also used half honey and half sugar (didn't want to do all honey in case it messed up the wet/dry balance). It worked great. I just finished a muffin with a hearty glass of milk. I'm in love. Thanks for sharing.
